Dining for all the senses

Where two culinary worlds meet
Our restaurant’s superb gastronomy is a reflection of Hacienda Piman’s location at a transition point between the coast and the mountains. Though only half an hour apart when travelling by car, the two are miles apart in their use of ingredients and flavours. Here at Piman, you can experience both culinary traditions.
Farm-to-table
Our farm-to-table cuisine is a gourmet take on regional and international specialties using local ingredients, influenced by classic dishes and innovative cooking techniques. Our natural environment inspires our dining philosophy: our menus are an extension of the hacienda experience. Our aim is to create intense yet balanced and delicious flavours made with home-grown and local, organic ingredients; served in style surrounded by natural colours, vintage furniture and modern-day simplicity.
Breakfast
In the morning, enjoy your coffee outdoors while a concert of birds accompanies the amazing views of the valley.
Juices
The natural fruit juices come from locally grown, exotic fruits such as mango and lemon, as well as those found on the farm such as chirimoya and lúcuma, brought here hundreds of years ago by the Zaldumbide family.
Desserts
It would be remiss of us not to offer a chance for guests to enjoy Ecuador’s chocolate — regarded as among the finest in the world — as well as plenty of other sweet delights!
Main courses
Similarly, the salmon in shrimp sauce on spinach crepes and the quinoa risotto with wild mushrooms are two of the most ravishing dishes, along with the traditional goat, Piman style.
Soups
Among the stellar soups is the delicate locro, a silky potato soup served with avocado, as well as the much-coveted white wine avocado cream.
Our chef
With more than 12 years of experience in several restaurants in the city of Quito, Chef Oscar accepted the culinary challenge of preparing a menu with unique dishes for Piman.
Influenced by international, American, Italian and Spanish cuisines and deeply rooted in Ecuadorian culinary tradition, he has created five different menus with several options that adapt to the tastes and preferences of each guest.
He cooks with passion and is inspired by the impressive surroundings of the hacienda, always looking for organic and local products, harvesting as much as possible from the hacienda’s orchard and its trees depending on the season. He will gladly share the recipes with guests who want a deeper culinary learning experience at the hacienda.
